Came to Kauai for fun, found your coconut macaroons and almost moved to Kilauea. My husband might just swim back just to get them. The macaroons we liked were just the plain macroons, no chocolate, no nuts or other coatings. They were kept in the case next to the registers, not in the small refrigerated case. Hope that gives you the right information. They basically looked like puffy sugar cookies, browned around the bottom edge.
Let me know if that isn’t a clear explanation and I’ll try to do better.

Coconut Macaroons from the kitchen of the Kilauea Bakery
8 cps dessicated coconut
(sweetened flake coconut or shredded coconut won’t work)
3 3/4 cps granulated sugar
3/4 cp all purpose flour
3/4 cp evaporated milk
8 large eggs
Method: Using a bowl and rubber spatula or a Kitchenaid style mixer with it’s paddle attatchment mix ingredients together until combined. Do not over mix. The finished dough should have the consistency of damp sand, not runny, not crumbly. Shape macaroons with a spoon or a small ice cream scoop, the ideal macaroon is shaped and sized like one half of a golf ball or chicken egg.
Bake on top of two cookie trays (the extra tray helps prevent the bottom from burning) in a 300° oven until the outside of the macaroon begins to look lightly toasted (approximately 15 -20 minutes).
To enhance the variety of selections at the bakery we sometimes add concentrated ingredients to make a new flavor like Lilikoi coconut, Cocoa coconut, or Raspberry coconut. If you use a syrup or liguid be sure hold back a like amount of evaporated milk so you don’t throw off the moisture content of the formula.
My family has been visiting Kilauea Bakery for over ten years. It’s one of our first stops on our way from the airport to Hanalei. Once we step foot in the bakery and taste so many of our fav treats we know we have arrived. Service is always top notch.
I love getting there early in the morning, danish coming out of the oven. My fav danish is lilikoi and guava. puts a huge smile on my face. I also bring an empty suitcase to take breads home back to the mainland. They are so earthy and fresh they make you feel like your home. Enjoy! Aloha, Mitch

I’ve dove Kauai several times and it has been outstanding, I’ve even dove Vertical Awareness( I’m not a great swimmer but watching my family dive Kauai I had to add it to my bucket list) among other areas. We’ve been visiting Kauai for over thirty years. Can’t wait to get back . When we do I need to stock up on bread & chai tea powder (:

Also, it looks as though we’ve found a new place to go for pizza. We used to frequent the Hanalei Pizza until new ownership took over a few years ago.
